For the second successive year, Sydney is to host a Macau Food Week to coincide with the annual Macau Festival in Darling Harbour¡¯s Tumbalong Park.
From October 19-26, the plush Sheraton on the Park will have a number of Macanese delicacies featured on the expansive buffet in its new-look Feast restaurant, which features a new lounge, private dining room and al fresco terrace with view of Hyde Park.
And the man behind the Macanese creations will be the hotel¡¯s Indian born executive sous chef Desmond Carneiro, who has an extensive family background in the Portuguese colony Goa.
Desmond grew up with cultural and culinary influences very similar to Macau.
¡°I must have inherited the passion for cooking from my great grandfather,¡± he said, reflecting on his ancestor¡¯s days serving on the Merchant Navy sailing the spice routes to Macau.
Familiar with the Macanese cuisine, Desmond has significantly influenced the dishes to be served during Macau Food Week, his colourful variety cooked with traditional recipes.
On the buffet will be such tantalising dishes as a chourico-scented Caldo Verde soup, Bacalhau Fritters, a Portuguese-style tomato and onion salad, the uniquely Macanese African Chicken, Gomes de Sa (salted cod with potato), Macau Prawns, Minchi (mice and potato) and desserts Serra Dura and Macanese egg tarts.
Feast offers a world of flavours, reflecting the culinary melting Pot that is Sydney. Australian produce including fresh seafood, a wide range of international dishes, gourmet pizzas and roasts from the stone hearth oven and home-made desserts make Feast a colourful new dining experience in the city.

Guests who visit the Macau Festival or the Food Week stand the chance to win a holiday for two to Macau, flying Virgin Atlantic and staying at the plush new Sheraton Macao on the Cotai Strip.
The Macau Festival will be colourful open-air event with a jam-packed program of non-stop free entertainment, free activities for the young and young-at-heart and a piazza of food stalls with more than enough delicacies to whet the appetites of guests seeking an exotic dish.
Darling Harbour¡¯s second annual Macau Festival 2012, once again organised by the Macau Government Tourist Office (Australia and New Zealand), will carry a theme supporting the Asian centre¡¯s ¡°Touching Moments, Experience Macau¡± tourism motto.
On stage for a second year will be popular band C Major, and contemporary dance groups choreographed by Natasha Crane and Rhys Bobridge. Performances by Southern Stars Performing Arts, Madeira Portuguese Band and the traditional Portuguese dancing group Aldeias de Portugal will also be on the program.
Among the free activities will be a rock-climbing wall, bungee trampoline, motor racing simulators as well as face painting and caricature sketching.
