Taste of Shook! 5-course taster from September 1 to 15 features menu highlights from new Executive Chef Matthew Ona Shook! Restaurant and Rooftop Terrace on Shanghai¡¯s historical Bund is launching its new a la Carte menu just in time for the onset of Autumn. Designed by new Executive Chef Matthew Ona, the menu takes the signature Shook! approach of hitting diners with an element of Asian surprise with whispers, hints and twists of Japan, China and Southeast Asia accenting the modern Western dishes. The menu begins with broths and soups including a Fall Harvest Cherry Tomato Gazpacho, with a smoky toasted sesame seed after taste. From the Raw and Salad Selection, the Classic Salmon Tartar is the embodiment of what Shook!¡¯s Autumn menu is all about ¨C adding crushed cilantro avocados and a oven-roasted tomato ginger miso rose sauce to give diners a hint of Japanese flavour. Other Japan-inspired dishes from the Raw Selection include a Tasting of Sashimi and Sushi and Makimono Rolls, drawing upon Matthew Ona¡¯s time spent at Tokyo Sushi Academy. For Appetizers, Pan Seared New England Scallops with Chardonnay Caper Veloute have two flavours clashing with each other as the fresh scallop crashes through the salty capers. While the Roasted Pork Belly is covered in a honey miso brown sugar glaze, and paired with the sweetness of homemade Kim Chee and chilies and Sakura Ebi and Mitsuba in a Bacon Dashi soup. Main dishes introduced for Autumn include Slow Baked Black Cod with Pancetta, New England Style Succotash, saut¨¦ed leeks and a caper herb citrus sauce. Chef Matthew has also drawn inspiration from his time in California¡¯s Napa Valley to give the San Francisco style Cioppino the Shook! signature Asian treatment. This classic Italian-American fish stew has been accented with spices from across Thailand and includes black mussels, clams, crab, scallops, shrimp, new potato, matignon vegetables, savory seafood broth and a sour dough crouton. Executive Chef Matthew Ona is excited to be launching his first signature menu in Shook!. ¡°I want to surprise the diners a little with Asian flavours coming through what they may see as contemporary Western dishes. Shook! is about having fun, experiencing little Asian twists on classic dishes will hopefully raise a few eyebrows and get people talking.¡± The new additions to the menu are available alongside classic Shook! dishes that have become the restaurant¡¯s signatures since the launch in Shanghai in the summer of 2011.
